A Lecture and Demonstration by Renowned Japanese Chef:

The Embassy of Japan is pleased to introduce Japanese chef Naoyuki Yanagihara, renowned for his traditional Japanese cuisine.

Mr Yanagihara will hold three amazing washoku events in Wellington and Palmerston North on the 17, 18 and 21 of August. These lectures are being held to promote and support International Language Week.

Mr Yanagihara will talk about the characteristics of Japanese cuisine and provide a demonstration on how to prepare Japanese dishes and the importance of “dashi”, Japanese cooking stock. The cooking session at WelTec will also include a demonstration of how to prepare and present a sashimi platter (fresh raw fish), a well-known Japanese delicacy, which takes years of training and uses dedicated knives for each type of fish.

Washoku” is considered to be the traditional dietary culture of the Japanese and it developed with a connection to the Japanese spirit of respect for nature. Washoku has recently been added to the list of the World’s Intangible Cultural Heritage (UNESCO).

Mr Yanagihara is the vice President of Kinsa-ryu Yanagihara School of Traditional Japanese Cuisine. Kinsa-ryu is a branch of traditional Japanese Tea kaiseki cuisine founded in the early 19th Century. He has been appointed as a “Japan Cultural Envoy” by the Agency for Cultural Affairs, Government of Japan and promotes Washoku, Japanese traditional cuisine.

For the lectures at Victoria University and Palmerston North Boys High School admission is free and open to the public. The workshop held at WelTec is only for students and teachers of The School of Hospitality.
