Beef and Brussels a winning combination for team

Beef and Brussels a winning combination for Whanganui UCOL team

A team from Whanganui UCOL has taken top place in one of the North Island’s premium chef training events.

The three students won the Ian MacLennan Teams Event at the Wellington Culinary Fair over the weekend, out cooking and out serving competitors from eight other training institutions and hotels from throughout the North Island.

Chef lecturer Claude Baudet, from the School of Catering and Hospitality, coached the kitchen team and says it’s a great result and a first for Whanganui UCOL.

At the live competition, the team of two trainee chefs and a trainee waiter were given two and a half hours to prepare and serve five identical portions of a three course meal (soup, main course and dessert), from scratch.

The winning team was: Hinearo Tetana and Zeik Pittams-Hudson (kitchen) and Amber Rose Edwardson (restaurant). Lecturer Carmel Hughes was front of house coach.

Their winning menu was:

Blue Cheese Pudding, Crème Fraîche

Poached and Roasted Sirloin of Beef

Gremolata, Red Onion Marmalade
