Heritage Auckland Introduces Raw Luncheon

HERITAGE AUCKLAND INTRODUCES RAW LUNCHEON
– FOR IMMEDIATE RELEASE 13 NOVEMBER 2014

Heritage Auckland, a hospitality industry leader in healthy and conscious dining, early last year introduced a Raw Bar Breakfast option in Hectors restaurant to great success. This week the hotel launches its first Raw Luncheon which will be available every Friday in Hectors.

The option is part of the hotel’s ‘square meal’ range comprising a delicious three-course tasting platter which is completely plant-based, suitable for vegan and vegetarians and is dairy and gluten free.

The menu items for the raw luncheon will change with the seasons, but an example menu includes a starter of chilled soup of tomato essence accompanied by an avocado asparagus salad with black garlic on cashew ‘parmesan’ toast. The main is blue agave glazed zucchini blossom with buckwheat cauliflower couscous and red pepper sauce. Following is a divine dessert of carrot & apple cake, coconut ‘cream cheese’ and strawberries. Natural unprocessed and uncooked plant foods are the key component for the raw diet. Nothing is cooked above 41 degrees Celsius as doing so is believed to destroy valuable enzymes for digestion and diminish nutritional value in the food.

“We have used a number of techniques such as preserving, pickling, compression, dehydration and sprouting to enhance the flavours of the raw ingredients. We have sourced raw virgin oils such as olive and coconut. We sprout and grow our own grains and seeds which are used in a number of the dishes,” says Heritage Auckland’s executive chef Jinu Abraham.

According to Jinu Abraham, the reason for introducing the Raw Breakfast Bar and now the Raw Luncheon option is a continuation of Heritage Hotel group’s healthy cuisine philosophy.

“In 2010 we observed the international trend towards conscious cuisine and saw a great fit with our own philosophies so introduced our first plant-based menus. At the time it was considered a niche dining style, yet each year our cuisine continues to gain in popularity. Today it’s flattering to see the ground swell of support and a number of local chefs follow suit on our initiative,” says Abraham.

The Raw Luncheon will be available every Friday from November 14th. The price of the ‘square meal’ Raw Lunch is $22 GST inclusive per person.
The hotel’s Raw Bar Breakfast continues to run daily. There is also an extensive raw juice menu available all day.
