Pavlova Competition deadline looms

29 November, 2013

Pav deadline looms

With less than a week to go, pav champions in Auckland still have time to register for the fifth Nosh Pavlova Competition.

The annual celebration of the pav pits amateur chefs against each other in three categories – adult 15 and older, children 14 and younger and an alternative category for those who think outside the baking dish.

Judges this year have been confirmed as:

Nosh Mt Eden – Nosh Baker Toni Lucas, Lauraine Jacobs and Nici Wickes
Nosh Constellation Drive – Nosh’s James Bennett, Liz Willis and Trudi Nelson

Listener food columnist and author Lauraine Jacobs says there are several tips to make the best pav.

“It’s bad from for a judge to give too much direction but without giving away too much I believe it’s important to remember eggs must be at room temperature.

“That way you get more volume when beating your egg whites which makes for a pavlova with better height and texture. We will be looking at height and texture as well as a number of other set criteria,” Lauraine says.

The pavs are judged on a range of criteria including meringue appearance and consistency, size and shape, taste, texture and overall presentation and decoration.

Pav makers need to drop off their creations between 8am and 10am on 3 December at either of two Nosh stores at 422 Dominion Road in Mt Eden or 10a Constellation Drive on the Shore.
