Culinary School Launches Gordon Ramsay Tante Marie Course

The Northland-based Culinary Institute of New Zealand (CINZ) is launching a new diploma as part of its professional cookery courses – developed in partnership with Gordon Ramsay’s internationally acclaimed Tante Marie Culinary Academy.

“Our professional qualification is designed in consultation with some of the industry’s leading chefs. Throughout this qualification, students will learn the skills and knowledge required to cook in a professional kitchen environment, and gain the keys to a successful career in the industry,” says Gordon Ramsay and Tante Marie.

The Culinary Institute, a boutique school based in Kerikeri, will begin teaching the Confederation of Tourism and Hospitality’s (CTH) Diploma in Culinary Arts from May 14.

Institute Manager and Head Tutor Noel McRae says students will study for the Diploma while completing the school’s NZQA-accredited national certificates in professional cookery, and the City and Guilds qualification.

The Diploma has been designed in consultation with some of the industry’s leading chefs. It is a mix of practical and theoretical sessions. As well as key cooking subjects, the course also covers menu planning and budgeting.

“It allows our students to tap into the skills of Gordon Ramsay as one of the world’s premier chefs. His food’s amazing and he’s a very talented operator in our industry – a true professional we can learn a lot from,” Mr McRae says.

The Ramsay’s U.K.-based Tante Marie Culinary Academy, is one of the oldest and most successful independent cookery schools on the international scene – well known to prospective employers.

“I believe the greater a student’s range of qualifications the more likely these are to be recognised overseas – and therefore the more employable the graduate student will be.”

Introducing the Diploma has other benefits, encouraging the Institute to broaden its curriculum. “If we teach the NZQA national certificates on their own, the curriculum is very specific. As course designer, I see the Diploma’s introduction resulting in a very balanced set of qualifications, which cover the full range of skills and knowledge required by a professional chef.”

General Manager for Quantum Education Group, Janet Dalby, says that adding the Diploma takes the Institute to another level of excellence. She says that it has always been the Culinary Institute’s aim to be a centre of excellence, and the Diploma is “another tool to ensure we’re achieving this.”

The Culinary Institute is a boutique school which offers a “real family environment,” Mr McRae says. “We know all our students individually, and tailor our teaching to individual needs, which is one of our strengths, and one of the reasons we’ve become known as a centre of excellence with award-winning tutors, who are some of the best chefs in the country.”
