Globe-trotting Chef settles at Snowplanet

Brazilian-born chef Eder Marinho is equally adept at creating culinary masterpieces in a restaurant or at someone’s house.

He’s just returned from a successful season in Brazil where, as a roving Chef and food consultant, he cooked for influential diplomats, entrepreneurs and journalists in their own homes.

“It was great fun,” he says. “I infused my dishes with a unique Kiwi flavor which went down a treat with my clients.”

Eder used Maori herbs such as Kawa Kawa and Horipito as well as Manuka honey and Manuka wood for smoking salmon.

Eder is now back in New Zealand (he originally migrated here from Brazil in 2007) and is working as Executive Chef at Snowplanet.

“We’re proud to have Eder on board,” says Nigel Stewart, Food and Beverage Manager at Snowplanet. “He’s always eager to push the boundaries when it comes to food. It makes for a very exciting menu.”

Eder’s background is in French and Italian cuisine and considers himself a specialist in fusion food that has a contemporary, yet rustic feel.
