NZ’s First A2 Feta Cheese

Boutique dairy manufacturer, Ridge Brands recently concluded its initial trial batch of New Zealand’s first a2 Feta Cheese. Interestingly a2 milk renders more cheese per litre than regular milk and delivers a smoother, creamier taste.

”The a2 beta casein protein is forever surprising us.” Says CEO, John Morgan.

“This is a very exciting time for us. Our a2 Feta could possibly be a world first."

He continued.

Ridge Brands manufacture other dairy products from a2 cow’s milk, including un-homogenised standardised milk, cream and butter and are developing an a2 drinking yogurt. All these products are certified organic.

Milk is a rich source of protein; however Professor Keith Woodford, author of ‘Devil in the Milk’, (Craig Potton Publishing Sept 2007) states that some of these proteins are not necessarily good for you. The difference in Ridge a2 milk is that it does not contain the genetic variant called A1 beta casein that some scientific studies have linked to a variety of health issues.

Ridge’s David Wright says “The best way to describe it (a2) is this.

Thousands of years ago all cows were a2. Cows in Asia and Africa remain that way. A chance mutation produced a protein variant that creates a major difference in some cow’s milk and cow’s milk only. a2 milk is the way nature intended it."

Ridge’s a2 Feta is expected to hit supermarket and health food stores within the next month.
