New Speciality Salt Already in Demand


New Zealand's half-century old tradition of producing fine culinary salt at Lake Grassmere salt fields in Marlborough has just been enhanced by the recent release of Marlborough Flaky Sea Salt.

Dominion Salt's marketing manager, Scott Coulter, says Marlborough Flaky was developed to target the growing specialty salt market.

The locally produced Marlborough flaky will also enable Dominion Salt to enter the flaky salt market currently supplied by the imported Maldon Sea Salt.

It was this growing specialty salt market which prompted Dominion Salt to carry out its own extensive research and development in producing flaky salt, says Coulter.

"The development process involved a bit of trial and error but we've finally created a product that's unique.

"The flakes provide a soft light texture, a delicate taste and excellent adherence to food," he says. "It sticks to food beautifully which makes it ideal for salads, pastas and even foods like French Fries."

The evaporation of flaky salt takes place in an open pan producing a unique flake shaped crystals. This physical distinction enhances the feel and taste sensations of Marlborough Flaky.

Somerset Cottage chef, Rick Lowe, says it was the fact Marlborough Flaky was New Zealand made and organic that first captured his attention.

"Being natural and locally made certainly gave it instant appeal, but it was also the quality of the salt that amazed me."

"I absolutely love the texture of the salt," enthuses Lowe. "It's brilliant to work with and the quality and taste is superior to any other sea salt I've tried."

Lowe foresees the salt being widely used in kitchens throughout the country due to its culinary appeal.

Another innovative move by Dominion Salt is having Marlborough Flaky packaged in a new convenient resealable package which keeps the flakes dry in the kitchen environment. Marlborough Flaky is also certified by Bio-Gro New Zealand.

The salt is now being sold into the food service industry as well as being available in 100gm packets at selected supermarkets.
